AFDO has released an updated guide for developing HACCP plans in retail settings called Guidance for Developing HACCP Plans for Specialized Processes. This new version offers helpful answers to common questions, and valuable resources, including free HACCP templates and examples (available for free download below).
These tools are especially useful if you’re creating a new HACCP (Hazard Analysis and Critical Control Points) plan, or just starting out with HACCP implementation. To use these resources, simply download the free templates or examples, use them as a starting point for your HACCP plan, and customize them to fit your retail food establishment’s specific processes.

- Each template is based on a standard or assumed order of steps, which may be different than the procedures followed by individual establishments.
- Each template also is designed for use with specific types of products, which may be different than those proposed by individual establishments.
- Each HACCP plan must be written to reflect the exact types of products to be processed and must describe the exact process as it is followed in each establishment.
- When necessary, the template must be modified to reflect these local variations.
- Each establishment bears full responsibility for the completeness, accuracy, and full implementation of its approved HACCP plans, and for seeking regulatory guidance before any changes are made to an approved process or HACCP plan.
