- Under Secretary Dr. Emilio Esteban presented virtually at the Food Safety Latam Summit to inform participants of FSIS’ vision to keep everyone’s food safe and how our regulatory system provides the framework for realizing that vision. FSIS engages in continual stakeholder meetings and data sharing, uses risk assessments to understand our approach to controlling pathogens, and collaborates with international organizations to advance food safety on a global level. FSIS works closely with industry, adhering to our science-based standards, to verify meat, poultry, and egg products are safe, wholesome, and properly labeled.
